Today – vegetarian Cumberland pie

I do love my food.

I also, as regular readers will know well, really hate waste of any kind, particularly food waste. This why I adore Vegetarian Cumberland Pie it just mops it all up!

Wasting food makes me really sad and wherever I can I try and reduce this. We meal plan carefully so we ensure what we buy gets eaten up and I try and not make too much. I also have a fair few leftover recipes up my sleeve.

Despite my good intentions fresh food particularly salad stuff sometimes spoils before I get to use it and this really frustrates me. So sad to throw away a pack of mushrooms that didn’t get eaten because no one fancied what was on the meal plan or because everyone had an impromptu playdate that night. Frozen food doesn’t spoil if you change your meal plan it just sits waiting and not spoiling in the freezer until you are ready..and it doesn’t matter if suddenly there is only one for dinner the rest will not go to waste.

I hate food waste! Such a waste of money and such a shame too!

Vegetarian Cumberland Pie is the answer!

But there is another reason I like frozen food so much. It’s because I really am not one to stand for hours chopping and slicing, peeling, cleaning and washing up. Frozen food provides a quick way of getting great fruit and veg packed with nutrients for much less effort. Now that’s the kind of cooking I like.

Due to how quickly harvested food can now be frozen frozen food often retains is nutrition better than fresh. Research has also shown it can save families up to £250 a year. Blimey that is a worthwhile;e saving to make!

I was given some vouchers recently to go and buy some frozen food and cook a great recipe with them. Frozen food doesn’t have to mean processed or ready prepared. Most of my money went on lovely quick frozen nutrient-packed veggies and I turned them into a gorgeous Cumberland Pie.

Vegetarian Cumberland Pie – Yum!

Here is my recipe for Vegetarian Cumberland Pie (inspired by my Slimming World eating plan!)

Ingredients

Sunflower oil fry light

600g Quorn mince

200g peas

200g sweetcorn

400g mushrooms

200g carrots

i large onion

1/2 a pepper

900g mashed potatoes

400ml of Vegetable stock

I 400g tin of chopped tomatoes

160 g low fat medium white cheddar

A super tasty protein rich vegetarian Cumberland pie

Ingredients

  • Sunflower oil fry light
  • 600 g Quorn mince
  • 200 g peas
  • 200 g sweetcorn
  • 400 g 400g mushrooms
  • 200 g carrots
  • large onion
  • 1/2 a pepper
  • 900 g mashed potatoes
  • 400 ml of Vegetable stock
  • 400 g tin of chopped tomatoes
  • 160 g low fat medium white cheddar

Instructions

  • Heat the over to 200c gas mark 6

  • Spray a large frying pan with the low-fat cooking spray and fry the onion till soft

  • Add the mushrooms, pepper, quorn mince and carrots and cook for 5 mins on a medium heat stirring occasionally

  • Add tomatoes, vegetable stock and seasoning and stir well, add peas and carrots too

  • Simmer for around half an hour

  • Microwave frozen mash for as long as it says on the packet (usually around 5 mins) then stir in 50g of low fat cheese into mash.

  • Spoon mince into an oven proof dish and add mash and sprinkle remaining cheese on top.

  • Bake in the oven for 40 mins or until golden
