When you think of Southern food, what is the first thing that comes to mind? For me, it is homemade biscuits topped with country white pepper gravy and a thick slice of tomato fresh out of the garden!

White Pepper Gravy Recipe (1)

When I first moved out on my own in my first year of marriage (at the age of 22), I tried to make from scratch white gravy without a recipe. This was silly considering I had never made it before in my life, but I figured that it couldn’t be too difficult to figure out on my own.

While making gravy isn’t difficult, you do have to understand how the flour, milk, and butter work together or you will end up with a gravy that is way too thick or way too thin.

In my case, I didn’t realize that the gravy would thicken as it cooks with the flour…. So I kept adding flour… and more… and more…

What I served to my then husband was essentially a bowl of flour and, bless his heart, he choked it down and pretended to like it.

Eventually, I got up the nerve to try cooking gravy again and my recipe got progressively better.

Now I have, in my opinion, the BEST homemade gravy recipe around!

Simple Country White Pepper Gravy Recipe

This homemade white gravy recipe will serve 1-2 people depending on how much gravy you like to use.

However, you can easily modify it to feed more people. Just be sure to keep the butter/grease and flour at a 1:1 ratio (so if you use 4 TBSP butter use 4 TBSP flour). Increase the milk accordingly.

White Pepper Gravy may also be referred to as country gravy, homestyle gravy, or sawmill gravy.

White Pepper Gravy Ingredients:

  • 2 TBSP Unsalted Butter or Bacon Grease
  • 2 TBSP Flour
  • 1 cup Milk
  • salt & fresh ground black pepper

>>Customize Your Homemade White Gravy

  • Make it spicier by adding more fresh black pepper or even a little cayenne pepper or red pepper flakes.
  • Add ground sausage for white sausage gravy.
  • If you have dietary restrictions, the butter/grease can be replaced with vegetable oil and the milk can be replaced with a non-dairy milk. Please note that the flavor and texture will be slightly different with these modifications.
  • Increase the milk if you like a thinner gravy.
  • Add in fresh herbs like thyme for a fresh flavor.
  • Use traditional buttermilk or a buttermilk substitute instead of milk.
  • Sausage grease, shortening, pan drippings from fried foods, and lard can be substituted in place of butter.

White Pepper Gravy Directions:

STEP 1: Melt Butter or Bacon Grease

Melt 2 TBSP of butter or bacon grease (you could even use sausage grease here) in a medium saucepan over low heat.

STEP 2: Add Flour

Add the flour to the melted butter 1 TBSP at a time to create a roux. Cook over medium heat and whisk.

STEP 3: Pour Milk

Gradually pour the whole milk into the flour and butter mixture. Whisk the buttery clumps into the milk.

Don’t worry during this step like I did when I first made country gravy. The gravy will thicken quickly and the clumps will clear. Don’t add more flour.

Continue to heat and whisk until the gravy meets the creamy texture that you want.

STEP 4

Add in salt and fresh black pepper to taste.

FAQs

What is American white gravy made of? ›

It begins with a roux made with butter and flour and is thinned to the perfect pouring or spooning consistency using milk. White gravy is simply seasoned with salt and pepper before serving.

How do you thicken pepper gravy? ›

If your gravy is on the skimpy side, you can thicken it quickly with flour or cornstarch. But don't add your thickener directly to the gravy, which will create lumps. Instead, try stirring in three or four tablespoons of flour or cornstarch into a small amount of cold water until you have a smooth paste.

Why is my white gravy bland? ›

If the gravy lacks oomph, adjust seasoning as necessary with kosher salt and freshly ground pepper. If you used canned stock instead of homemade, the gravy might not be as flavorful. Homemade stock, even made with chicken stock rather than turkey, will produce a superior gravy—so it's worth the effort.

Is gravy better with flour or cornstarch? ›

Browning adds more flavor to the gravy and gets rid of the raw flour taste. You're basically making a roux. We find that a flour-based gravy holds up better and reheats better later, which is why we tend to prefer using flour over cornstarch to make gravy unless we have a guest who is eating gluten-free.

What thickener is best for gravy? ›

Similar to flour, cornstarch is another ingredient that can be used to make gravy thicker. With cornstarch, making a slurry is also an option, but with 1 tablespoon of cornstarch whisked into cold water. Again, you'll want to add the slurry in increments so you don't over-thicken the gravy.

How do you add richness to gravy? ›

Milk and cream add richness and flavor; they can round out or mellow any sharper flavors that develop along the way. Finishing a sauce or gravy with butter will thicken the gravy and add a velvety texture—a surefire way to up your gravy game.

Is country gravy and white gravy the same thing? ›

There is no difference. In the South, country gravy and white gravy are used interchangeably and both for the same type of thick, creamy gravy made with butter, flour, and milk. You may also hear these gravies called sawmill gravy, and some people use this recipe but add sausage for a sausage gravy.

Why is white gravy called sawmill gravy? ›

The term "sawmill gravy" comes from early logging camp food and old-time sawmills. It was originally made with cornmeal, bacon drippings, milk, and seasonings. This resulted in a somewhat gritty gravy; in fact, rumor has it that the loggers would accuse the cooks of putting sawdust in the recipe!

What is another name for white gravy? ›

Cream gravy or white gravy (sawmill gravy) is a bechamel sauce made using fats from meat—such as sausage or bacon—or meat drippings from roasting or frying meats.

What do English people call gravy? ›

Onion Gravy or Traditional British Gravy is what British people call gravy. Americans call it Brown Gravy, White Gravy (sawmill gravy or Breakfast Gravy), which is topped on biscuits. Brits don't put gravy on biscuits.

What is the difference between British and American gravy? ›

British gravy is more like what America would consider a jus or red wine sauce, but thickened with cornflour. Think of an American 'au jus' but with a consistency of whole milk.

What ingredient is white pepper? ›

White pepper, like black pepper, is made from the berries of the pepper plant, also known as the Piper nigrum. Unlike black pepper, however, white pepper comes from berries that are picked at full ripeness. These berries are then soaked in water to ferment.

What's the difference between gravy and white gravy? ›

It turns out, the biggest difference between the two is brown gravy is broth-based, while white gravy typically has a milk or cream base. Garcia said both types usually have flour or cornstarch for thickening and they both contain some sort of “fat or meat drippings.”

Is peppered gravy the same as country gravy? ›

The only difference is whether you use black pepper or white pepper in the recipe. Similarly, this can be called a country gravy, which typically uses the same ingredients. However, I find peppered gravy is typically a little more assertive in its use of ground pepper.
