These coconut cookies look beautiful and are perfect for a special occasion, but the best part is that they’re so easy to make! They are perfect for snacks, lunch boxes, or a dessert for a gift box.

By just spending a little time making these, you’re never going to want to buy the store-bought macaroons ever! My family absolutely loves them.

Want to learn how to make them? Then keep on reading!

What are Macaroons?

Macaroons are coconut flakes-based cookies that are chewy in texture and are often toasted on the top. They are also often dipped in chocolate and make for one of the most delicious cookies out there!

Most macaroons tend to be primarily gluten-free, but it’s not necessary. My recipe for macaroons does not use traditional all-purpose flour at all, and instead uses coconut flour which takes the flavor to a whole new level!

These cookies are special and don’t require any special stand mixers to make. You can easily make these at home with just a regular electric mixer!

What’s best is that these cookies seem to be something that both adults and kids love! They’re easy enough to whip up quickly during the week but fancy enough to also serve to guests or during special occasions.

These cookies are truly one of a kind, and if you’ve never had macaroons before you’re going to fall in love with my Chocolate Dipped Coconut Macaroons recipe!

What’s the Difference Between Macarons and Macaroons?

Macarons and macaroons maysound similar, but that is about the extent of their similarities. Although macarons and macaroons include some of the same ingredients, the cookies themselves differ significantly in flavor, texture, and technique.

Macarons are cookies made with almond flour and egg whites that have a creamy core that is often made from ganache or buttercream.

There are several methods for making macarons, the most popular of which being French macarons and Italian macarons. The texture of macarons is soft and somewhat chewy. They also primarily rely on egg whites to give the cookie its distinctive round shape.

Macaroons, on the other hand, are made primarily of coconut flakes and a small amount of flour. Macaroons, unlike macarons, have a chewy texture and are frequently toasted on top, andsometimes dipped in chocolate.

It’s these coconut flakes-based Macaroons that we’ll be making today and is the recipe that I’m sharing. If you’ve never had these, you’re truly in for a treat!

Are These Cookies Gluten-Free?

One of the best parts about these incredibly delicious Coconut Macaroons is that they’re actually naturally gluten-free! This is especially the case in my recipe as I’ve not even used a little all-purpose flour and instead used coconut flour to make these cookies.

This not only adds to the flavor but makes them entirely gluten-free. If you’re avoiding gluten yourself or making it for someone that is, just make sure to pick chocolate that’s also gluten-free when dipping the Coconut Macaroons into it.

What You Need to Make Chocolate Dipped Coconut Macaroons at Home

Coconut macaroons are incredibly easy to make and require ingredients that you can easily get your hands on! Here’s everything you’ll need to make these Chocolate Dipped Coconut Macaroons at home:

Eggs: Eggs are our primary binding agent that keeps the cookie together and gives it its shape. For this recipe, we’ll need 2 large whole eggs.

Maple syrup: Maple syrup adds a beautiful flavor profile to these macaroons, and it goes incredibly well with the coconut flakes and taste. This is what we’re using primarily to sweeten these cookies. Other recipes sometimes use sweetened condensed milk but it makes the cookies overly sweet. Maple syrup is seriously the way to go!

Butter: Butter will add a beautiful texture and richness to the cookies and is a really important ingredient! We’ll need unsalted butter for this recipe as salted butter would alter the flavor too much, and this way we can control how much salt to add to balance everything.

Salt: All we need is ⅛ teaspoon salt to balance out the flavors and sweetness. This might not seem like a lot, but it makes a huge difference!

Vanilla extract: Vanilla extract adds an additional layer of flavor and makes the cookie come together beautifully! All we need is ½ teaspoon vanilla extract for this recipe. Other recipes use almond extract sometimes, but there is nothing like the combination of vanilla with coconut!

Coconut flour: Coconut flour not only helps with the texture but also adds a beautiful flavor to the cookies! What’s best is that it’s still gluten-free!

Coconut flakes: Coconut macaroons can’t be coconut macaroons without some coconut flakes, of course! We’ll be using sweetened coconut flakes for some added taste.

Hershey’s dark chocolate bar: I’ve used a Hershey’s dark chocolate bar to make the ganache to dip the Coconut Macaroons in. Adding this bittersweet chocolate ensures that the cookies don’t turn out overly sweet. But you can choose whichever type of chocolate you want, such as semi-sweet chocolate chips.

Whole milk: We’ll use whole milk to melt chocolate in and to make the beautiful ganache that the cookies are going to be dipped in at the end.

Time to prep the cookies for baking! We’ll scoop the coconut mixture and place it onto a baking sheet lined with parchment paper. Shape the bottom of each cookie into a circular shape.

I prefer using a tablespoon to scoop these instead of an ice cream scoop as this makes sure that the cookies aren’t too compact and can turn out nice and flaky.

Time to bake these incredibly delicious macaroons! Bake the cookies for 20 – 25 minutes on the lowest oven rack. I prefer baking cookies for the full 25 minutes because I like the coconut toasted to golden color.

Once done, place the macaroons on a wire rack to cool completely.

Next, remove macaroon cookies from parchment paper and place them onto a serving platter. These delicious cookies taste best the next day after absorbing all the flavors.

Why Did Your Coconut Macaroons Come Out Dry?

If you’re Coconut Macaroons came out dry, then you might have over-baked them. I recommend checking your macaroons after 15 every minute while it’s baking if it is your first time baking them because every oven is different.

You should also make sure that you’re using fresher coconut flakes that haven’t gone stale. If they have, you will end up with dry macaroons.

Why Did Your Coconut Macaroons Spread?

It’s natural for macaroons to spread a little bit while they’re baking, but if they’ve spread too much and become flat, then there’s a problem.

If your macaroons are spreading too much, the coconut mixture might be too warm. I recommend chilling the mixture in that case for 20-30 minutes before baking these delicious cookies!

How to Store Coconut Macaroons?

You can easily store coconut macaroons in an airtight jar on the counter at room temperaturefor up to 4 days. They can also be storedin the refrigerator for up to two weeks.

You may also freeze the cookies for up to 3 months in a freezer-safecontainer. Just make sure to layer the macaroons between sheets of parchment paper in an airtight container so they don't stick together. When you're ready to serve them, allow the macaroons tothaw on the counter before serving.
