Good morning. Can you make shortcrust pastry in a food processor or stand mixer. Also can you freeze uncooked unrolled pasty? Many thanks

Hello,

Yes, making pastry in a processor is possible.

Take care not to let the fat and flour get to fine when you form the ‘breadcrumb’ mix.

Only pulse / mix in the water briefly then finish by hand.

Generally, we prefer the results when shortcrustit is made by hand.

You can freeze uncooked pastry but if you roll it and freeze and plan to shape once defrosted there is a risk that it will be dry and prone to crack.
