These Paleo Chocolate Cranberry Biscotti Cookies are delicious dunked into a steaming cup of coffee.

You guys. This is one of THE BEST cookies! They don’t taste “healthy” at all. Granted there is chocolate in them and we all know chocolate makes everything better but these Paleo biscotti do not disappoint.

These cookies were made for a gift…When thinking about what cookie to make as gifts I think it’s important to think about who they’re going to. If it’s someone that’s close to you there’s a good chance that you know how they eat. If not and the cookies are for coworkers or someone you don’t know as well I think it’s important to heed caution and go with something healthier. There are so many different diets out there right now and with the growing prevalence of food allergies, gluten intolerance, and a host of other food beliefs I think the best gift giving cookie would be one that’s healthy. This one sure fits the bill. I’ve only made biscotti a handful of times but let me tell you that while it may look intimidating it’s the easiest thing ever and is always impressive. Not to mention that they go great with a steaming cup of coffee or tea!

Paleo Chocolate Cranberry Coconut Biscotti

Ingredients

  • 4 eggs
  • 1/3 cup coconut oil melted
  • 1/3 cup maple syrup
  • 2 tablespoons honey
  • 1/2 tablespoon vanilla extract
  • 3 cups blanched almond flour
  • 3 tablespoons coconut flour
  • 1/2 teaspoon baking soda
  • 1/2 cup paleo chocolate chips
  • 1/2 cup dried cranberries
  • dried unsweetened coconut for topping about 1/4 cup

For the Drizzle

  • 1/2 cup paleo chocolate chips
  • 2 tablespoons coconut oil
  • 2-4 tablespoons dark cocoa powder

  1. Preheat oven to 375 and grease a large baking sheet with a tablespoon or two of coconut oil.

  2. Whisk the eggs in a large bowl. Next, whisk in the coconut oil, maple syrup, honey and vanilla.

  3. Stir in the almond flour, coconut flour and baking soda.

  4. Mix in 1/2 cup chocolate chips and cranberries.

  5. Form the batter into a loaf on the baking sheet (the batter will be a tad sticky and runny)

  6. Sprinkle the top with the dried coconut and bake for 20-30 minutes.

  7. After the loaf it golden brown and no longer mushy in the middle use a knife (serrated works best) to slice loaf into 1/2 inch pieces.

  8. Spread the biscotti out just a bit for even cooking and place back in the over for 10 minutes.

  9. Flip the cookies with a spatula and lower oven to 300. Bake for another 10 minutes.

For the Drizzle

  1. In a small pot over low heat melt the coconut oil and chocolate chips. While whisking add in just enough cocoa powder to thicken the mixture just a bit. When your satisfied with the consistency drizzle the sauce over the biscotti.

  2. Serve

    This recipe is spot on!! The only trouble I had with the directions was how to make the loaf – how thick, how wide etc. I figured it out on my own and it worked. Awesome recipe!! I’m Italian so this is part of my heritage and they stack up just fine. THANKS!!

    I’m confused about the directions where it says to “spread dough on large baking sheet” and then further down it says to form into a loaf. Please explain that part.

    Can I use chestnut flour instead of almond flour? I’m allergic to nuts!

      Hi Sharlene, coconut flour has a completely different consistency than almond flour so no, that will not work.

    My friend made these and they were incredible! So I tried & did half the recipe. Unfortunately the dough came outbreaks so crumbly & would not hold together. I’m not sure why??

      Hi Giselle! I’m not sure why yours turned out crumbly. It could be due to using too much flour. What method do you use to measure your flour…scoop, sift, packed?

    It’d be great if there were recipes for Paleo baked goods that did not use almond flour. My daughter is allergic to nuts. They look delicious though.

      Hi Sharon! Is she allergic to other nuts? If not you can replace the almond flour with another nut flour like hazelnut.

    What do you mean by “agave maple syrup”? Is that a special combination of the two sweeteners?

    What truly gorgeous biscotti! This recipe wins me over in so many ways. I love cranberries which are even better paired with chocolate! Biscotti are my favorite cookie for munching AND for gifting. Finally, I haven’t been able to find a good gluten free biscotti, so this recipe is extra exciting! Can’t wait to bake and share these.     What a great recipe! It’s nice to have few that I can make serve anytime and know that my guests won’t have to worry about messing up their eating plans.
