Gluten-Free Vegan Thanksgiving Recipes (3)

I’m so excited to share my Gluten-Free Vegan Thanksgiving Menu with you!! I’ve been making variations on these recipes for about four years now, and my whole family loves them. The gluten-free vegans who eat like me (hi, sister!), and the “regular” eaters alike.

Being vegan (AND gluten-free, in my case) on Thanksgiving may feel like a difficult time, and some folks may feel left out. We NEVER want that to be the goal, and with these recipes, you won’t be missing out at all. This collection of vegan Thanksgiving recipes includes appetizers, main dishes, side dishes, sauces, and of course – lots of healthier Thanksgiving desserts that are perfect for celebrating!

My goal on Thanksgiving is always to make the day as enjoyable as possible, so I can spend time with my family instead of running wildly around the kitchen. That usually means prepping a lot of the dishes ahead of time – at least as much as I can manage. Most of these recipes provide make-ahead options so you can just bake and serve on Thanksgiving day. I hope you have a wonderful and delicious holiday!!

Description

The BEST Easy Healthy Sweet Potato Casserole to serve for Thanksgiving! Plus, lots of Gluten-Free Vegan Thanksgiving Recipesto make planning your vegan Thanksgiving menu SO much easier! With recipes for everything you’ll want on the table, this Thanksgiving menu is going to simplify your holidays.

Ingredients

Scale

For the Sweet Potato Mash

For the Pecan Topping

  • 1 cupchoppedpecans
  • 1 cup almond oroat flour
  • ¼cupcoconut sugar
  • ½cup (1 stick)vegan butter,softened and cut into cubes
  • ¼teaspooncinnamon,optional
  • Pinch ofsalt

Instructions

For the Sweet Potato Mash

  1. Add your sweet potatoes to a large pot and just barely cover with water. Bring to a boil and simmer until fork-tender, about 20 to 30 minutes depending on the size of your cut potatoes.
  2. Once they’re tender, drain the potatoes and add them into a large mixing bowl.
  3. Let cool slightly, and then mash the potatoes with apotato masher.
  4. Add in the flax eggs, coconut sugar, vegan butter, vanilla extract, and salt. Stir until well combined, mashed to your liking, and the butter has fully melted and incorporated.
  5. Spread the sweet potato mash into a lightly greased casserole dish. Mine was around 8″x11″, but anything around that size will work well. Set aside while you prepare the pecan crumble topping.

For the Pecan Topping

  1. In a mixing bowl, combine thepecans, flour, coconut sugar, vegan butter, cinnamon, and salt. Mix together until well combined and crumbly.
  2. If it doesn’t seem crumbly enough, place it in the refrigerator for about 10 minutes to firm up the butter.
  3. Sprinkle evenly on top of the sweet potato mash.
  4. Bake at 350°F for 30 minutes until the top is crispy and browned.

Notes

For the flax eggs:combine two tablespoonsflax mealwith ⅓ cup water. Whisk together and let gel for 5 to 10 minutes until thickened before using.

To make ahead:Prepare the dish right up until baking, and then cover with foil and store in the refrigerator for up to 2 days. When you’re ready to bake, remove the foil and bake as directed above. It’s perfect to make ahead of time to reduce stress on Thanksgiving!

To store leftovers:Keep tightly wrapped in foil in the refrigerator for up to 5 days.
