Thawed cucumbers can work in recipes where they’re broken down like smoothies, juice, gazpacho, or even tzatziki if you blend or grate them before freezing. How to freeze cucumbers

A cucumber lasts about 1 week in the refrigerator in the produce bin. The best way to save a cucumber beyond that point? Try it in recipes like a batch of cucumber salad: the vinegar in the dressing preserves the cucumbers for up to 7 days. Or make refrigerator pickles to extend their life for up to 1 month!

But if you don’t have time to make salad or pickles, you can freeze cucumbers! Again, only use them in blended recipes. Here’s how to freeze cucumbers:

  1. Slice the cucumbers into rounds.
  2. Line a rimmed baking sheet with parchment paper, then place the cucumbers on top in a single layer. Flash freeze for 1 hour.
  3. Transfer to an airtight container or sealable freezer-safe bag. If using a bag, use a straw to suck any remaining air out of the bag and seal it. Mark a “Use by” date 3 months in the future.
  4. Place in the freezer and freeze up to 3 months.

Frozen cucumbers can be used right from the freezer in cooked dishes: no need to defrost! But if you’d like, you can defrost them overnight in the refrigerator. Here are a few tips:

  • Use frozen cucumbers only in cooked dishes, like smoothies, juice, and cold soups like gazpacho. Don’t use them raw in salads because the texture is soggier after freezing.
  • Frozen cucumbers can be added right to blended dishes: no defrosting is required. Or, you can defrost the cucumbers by placing them in the refrigerator overnight.
